There’s a choice of 10 red sauce pizzas, six white pizzas (without tomato sauce) among the pre-sets — about the most complex of which is the capricciosa, topped with cotto salami, mushrooms, roasted artichoke and Gaeta olives. The toppings are meant to match the Italian flag — red tomato, white mozzarella and green basil. To that, moving down the list, the kitchen adds pepperoni, Calabrian salami, artichokes, ham, mushrooms, olives, arugula, bresaola, prosciutto, sausage — even anchovies and smoked salmon. But then, when it comes to eccentric pizza, there may be nothing to compare with Tom Seefurth’s Mamma Mia Pizza Beer — beer-flavored with oregano, basil, tomato sauce and garlic.

The choices are many, and in this case, highly subjective. But when the need is upon me, this is where I go. And the need comes upon me often — at least 30 times a year, if not more than that.
